Strawberry Rhubarb Protein Overnight Oats
You guys, when I say that this is the overnight oats recipe of the summer, I don’t think that I’m over exaggerating one bit. The fresh strawberries, the rhubarb that if you don’t personally have it in your garden could take you a ton of energy to track down (keep reading to find out how long it took me… lol), and the fact that overnight oats are served cold instead of warm make this the ultimate summer time move.
If you’ve been following me on Instagram for any amount of time you may have noticed some things. Like for instance that if I like a meal I’ll eat it on repeat into eternity and beat it like a dead horse (sorry for that visual animal lovers). Sometimes it feels like I cannot help being the anxiety ridden, control freak, creature of habit that I am. This side of me LOVES repeating meals that I: enjoy eating, are easy for me to make, don’t break the bank, and make my body and mind feel great. Hence why I’ve had my “smoothie bowl” recipe on repeat for the majority of the last 5 years or so (it will definitely have it’s moment to shine here on the blog soon). I love my smoothie bowl to infinity and beyond- its easy, high protein, and tastes like ice-cream for breakfast. What more could I want?
Well apparently I could want Strawberry Rhubarb Protein Overnight Oats, that’s what more. It came to me over the past several weeks and then suddenly all at once. Not this specific recipe- although it did hit my heart rather suddenly. But rather the direction I was heading in with my life, my brand, and my desire to be creative and share with others the things I’m most passionate about. One of those passions being food. And not just any food. Healthy food that’s nourishing, delicious, doesn’t break the bank, and doesn't always take hours to make (sometimes it does, and we’ll reserve those meals for rainy days and date nights with a glass of wine in hand). As a self proclaimed Foodie, Fitness professional & wellness enthusiast I wanted to create recipes, workouts, lifestyle content, blog posts and more that reflected what I stand for and where my passions are!
So, here we are: recipe 001 on the blog; the first of many blog posts as I dedicate more and more time towards pursuing my dreams and passions as a wellness content creator. You heard it here first folks- and maybe it’s been obvious by the amount that I post on my instagram and Facebook accounts this wasn’t just for fun (although I’d be lying if I said I wasn’t enjoying the process).
I’ve known for a while that this was something I seriously wanted to pursue but I’ve felt held back for a while for a variety of reasons (an entire other blog post). Part of what was holding me back was not always knowing what to share, or knowing if what I had to share was worth sharing. Well, turns out waiting until I “know” things doesn't’t get me very far, so instead I’ve decided to heck with it; I will share what’s on my heart, and the type of content that I enjoy. Which brings me back to food and switching up my meals. I LOVE food. I love trying new foods, restaurants, coffee shops, and even just taking my time in the grocery store. I’ve also developed a desire recently to let my inner creative soul and idea maker to come out more, along with my desire to learn new skills. Well, what better way to do all the things then to teach myself how to make the healthy recipes that I love and share them with all of you? And, because of this new pursuit, I need to get out of my own comfort zone and make different foods throughout the week. Bonus!
Last week I came to my decision on all of this. On going full throttle content creating. On recipe development and posting on my blog. And on Friday night the idea fairy planted this recipe in my brain that I knew I had to make. Strawberry Rhubarb Protein Overnight Oats. The thought of making this recipe made me SO excited ! I figured it wouldn’t be too difficult to start with, especially considering I had most of the ingredients already. All I needed was the strawberries, almond milk and the rhubarb…
Well, to my surprise- finding a single stem of rhubarb was not easy given that they are currently in season. After checking multiple locations and stores, Ryan and I found ourselves at the Shaws the next town over where the online shopping system said they definitely had it in stock. We searched the entire store for rhubarb to no avail. I was bummed and started to try and think of what else would go with the strawberries for a summer vibe. We headed back to the produce section for some inspiration when Ryan had the bright (and logical) idea to ask someone for help. Ryan saved the day! They had some out back that they hadn’t cut yet. Yay! So, I picked up my strawberries, rhubarb and almond milk (which is a whole other story for another day) and we headed home for me to get started!
I got to work, filming every step of the way with my ring light. The recipe makes plenty of leftover strawberry- rhubarb jam so after everything was said and done for the overnight oats, my official taste tester (Ryan) and I decided to try some with vanilla Greek yogurt. Wow. This was definitely one of the most delicious things I have every had. Perfectly sweet, and the rhubarb really shines with the strawberries. The next morning I had the full blown overnight oats experience. What a treat to wake up and have my breakfast be already prepared. It was delicious,, filling, and hit the spot. When decided what to add I included protein powder, along with flaxseed to help with blood sugar regulation, especially given that this is a sweeter meal.
And, to top it all off I have the cutest mason jars specifically for overnight oats. Definitely adds to the experience IYkYK. I’ll link the jars after the recipe. I guess, without further ado, let’s get into the full recipe :).
Strawberry Rhubarb Protein Overnight Oats
*Makes 2 overnight oats + plenty of leftover Strawberry Rhubarb Jam
Ingredients:
1 lb Fresh Strawberries
1 Stalk Fresh Rhubarb
3 tbsp Maple Syrup
3 tbsp Chia Seeds
1 cup Oats
2 tsp Flaxseed
1/2 tsp Salt
1 cup Almond Milk
2 Servings Vanilla Protein Powder
Directions:
Wash all produce and de-stem strawberries. Take 2/3 of the strawberries and chop up into fourths. Chop Rhubarb into thumb sized pieces.
Bring a small pot over medium high heat and add chopped strawberries & rhubarb. Set aside the other 1/3 strawberries for now.
Add to the pot the maple syrup, and chia seeds. Stir well and stir frequently.
After 10 minutes, reduce the heat to low-medium and for 15 minutes before removing the pot from the burner and letting cool for serving. Continue to stir every few minutes.
While the jam is cooking, add the remaining strawberries, almond milk, & protein powder to a blender. Blend until “strawberry milk” is smooth.
To prepare the oats: Combine 1/2 cup oats, 1/4 tsp salt, & 1 tsp flaxseed to each jar and stir to combine. Pour half the strawberry milk into each jar. Stir again to let the oats fulls absorb the milk. Spoon on top as much jam mixture as will fit. Secure tightly and store overnight in the fridge. Enjoy the next morning.
